This
week, in keeping with
the theme “great
recipies that taste
better and are better
for you when prepared
with wild game,” wait
til you see the grouse
tortellini soup I’ll
be showing you. You’re
absolutely gonna have
to make this one for
yourself.
I
start by mixing the
water and cornstarch
and set it aside. I
heat 1 tbsp oil in
a saucepan at medium
heat and add the grouseand
cook it until browned,
stirring often. Once
the meat is browned,
I take if out of the
pan and set it aside.
I then add the rest
of the oil and sauté the
onions, celery, green
beans and carrots cook
until tender - crisp.
In
a pot, I then add the
broth and heatit to
a boil then add the
tortellini and tomatoes
and cook 10 minutes
until tortellini is
tender.
I
then return the grouse
to the pan and heat
through. The I stir
in the cornstarch mixture
and cook until the
mixture boils and thickens
slightly. I serve this
soup with a parsley
garnish.
Pipping
hot, warm-you-to-the-core
tortelline soup with
grouse. All I can say
is whenever I serve
it; I’m always
scraping at the bottom
of the pot to have
enough to keep everyone
happy.
The
Recipe...
1
tbsp cornstarch
1 tbsp Northwood’s Grill Seasoning
2 1/2 tbsp olive oil
5 grouse breast strips cut into cubes
1 small onion chopped
1/2 cup thin sliced carrots
1 cup fresh green beans sliced
4 cups chicken broth
2 cups dried cheese filled tortellini
1/2 cup celery (finely chopped)
1/2 cup can diced tomato with garlic
Mix
water and cornstarch
set aside. Heat 1 tbsp
oil in saucepan at
med heat add grouse
cook until browned
stir often then remove.
Add rest of oil sauté onions,
celery, green beans
and carrots cook until
tender - crisp.
Add
broth heat to boil
add tortellini and
tomatoes cook 10 minutes
until tortellini is
tender. Return grouse
to pan and heat through.
Stir in cornstarch
mixture cook until
the mixture boils and
thickens slightly.
Serve garnish with
parsley.
