Pineapple Meatballs

How Kris does it...

This week I’ll be sharing a recipe for the fastest, easiest, most moist and flavorful wild game meatballs you’ve ever tasted.

We’ll do them in the microwave and we’re talkin’ like 15 minutes from beginning to end. So let’s get em’ going.

I combine the meat, egg, breadcrumbs, onion, seasonings and 2Tbsp reserved pineapple juice and mix it well. I then mold a small portion of the meat around each pineapple chunk.

I place them into 12 x8 glass baking dish and then cover with Saran wrap. I just microwave them on high for 4 to 5 minutes or until they are done.

I pour the juices over the meatballs.

While the meatballs are cooking, I mix 1/3 cup pineapple juice, ketchup, brown sugar and I mix it well. I then pour this over the meatballsand place it back into microwave for 5-6 minutes. I prefer serving this over a bed of rice.

Moist, tender wild game meatballs that are low in fat, but exceptionally high on flavor. Serve these either as an appetizer or more as a main dish along with your favorite side dish.

The Recipe...

1 lb ground venison
1 egg
1 1/2 tbsp minced onion
1 20 oz canned pineapple chunks (reserve juice)
2 slices bread (crumbled)
1/2 cup ketchup
1/3 cup brown sugar
1/8 tsp all spice
1/8 tsp ground cloves
1/3 c up + 2tbsp reserved pineapple juice

Combine meat, egg, breadcrumbs, onion, seasonings and 2Tbsp reserved pineapple juice, mix well. Mold small portion of meat around each pineapple chunk. Place into 12 x8 glass baking dish covered with Saran wrap. Microwave on high 4 to 5 minutes or until done. Pour over juices. Mean while mix 1/3 cup pineapple juice, ketchup, and brown sugar. Pour over meatballs place back into microwave for 5-6 minutes. You may serve in a pineapple half, or over a bed of rice.

Garnish or Hint Serve with green, yellow and red peppers for color.
