Pumpernickel bread
Cooking Spray
2 ½ Tbsp onion (finely chopped)
1 ½ Tbsp brown sugar
1 ½ Tbsp Cider Vinegar
2 cups cooked left over turkey (chopped)
3 Tbsp reduced fat Mayonnaise
½ tsp curry powder
Pepper & Salt to taste

Trim crust of bread. In non-stick skillet, spray cooking spray heat on medium high add onion cook 5 minutes. In small bowl combine sugar, ½ tsp vinegar and stir until sugar dissolves then add to onions remove from heat cool to room temperature. Combine onion mixture remaining 1 Tbsp vinegar, turkey and remaining ingredients. Place turkey salad on bread and serve.
