Walleye Wild Rice Soup

How Kris does it...

There’s never a shortage of how to prepare walleye and one of our favorites here around the winkelman home is the delicious taste of walleye wild rice soup.

Start by whisking together 1/3 cup of flour, some salt and pepper and a half cup of milk until it’s smooth. Then set this aside for later. You’ll want to use a 6 ounce box of long grain and wild rice soup mix, preparing it as instructed on the box. I’ve already prepared this for times sake.

Meanwhile, in a sauce pan, melt 1 and a half tablespoons of butter over medium-low heat and add in some chopped onion. Cook this until the onion is tender and then you can turn the head up to medium. Stir in a couple bottles of clam juice, a cup of heavy cream, and about 3 and a half cups of milk. Once it starts to boil you’ll want to add your flour mixture while stirring constantly.

Let it boil for about a minute before adding in a cup and a half of cut up walleye pieces along with the wild rice soup mixture. You’ll want to cook this until the fish flakes.A few minutes later and you have some delicious walleye wild rice soup that i just know your family is going to love.

 

The Recipe...

1 6oz box long grain & wild rice soup mix
1/3 cup flour
4 cups milk
1 1/2 tbsp butter
1 small onion (chopped)
2 8 oz bottles clam juice
1 cup heavy cream
1 1/2 cups Walleye filet cut in to pieces
Salt & pepper to taste

Prepare rice soup according to directions on box. Mean while stir together flour, salt pepper and a 1/2 cup milk until smooth, set aside.

In sauce pan melt butter over med-low heat add onion and cook until tender. Increase heat to medium and stir in clam juice, cream and remaining milk heat to a boil. Add flour mixture stirring constantly. Let boil 1 minute. Add fish pieces and rice soup mixture cook until fish flakes and done.
