Asparagus Fish

How Kris does it...

I’m always looking for different and great ways to serve tasty fish and game and today i’ve found a recipe i just know you and your family will enjoy.

Start by steaming the fresh asparagus. Get that done and season your fish with our savory table seasoning. In this case I am starting with 4 walleye filets, but any white fish will do.

I then roll the walleye fillets around the Asparagus spears so the ends are sticking out.

I then put the fillets into a baking dish and then heat together the butter, lemon rind and juice, the onions and the mustard.

I then pour the heated ingredients over the fish and bake in a pre-heated oven at 400 degrees for about 10 to 15 minutes or until the fish flakes. I try to baste the fish twice during the baking period.

What a healthy way to enjoy both fish and vegetables. I can’t wait to serve this to my hungry family and watch the smiles form on their faces.

The Recipe...

4 walleye filets
1 lb asparagus (fresh)
1 tsp lemon rind (grated)
6 tbsp butter
3 tbsp lemon juice
3 tbsp onion (grated)
1 1/2 tsp dry mustard
1 tsp savory table seasoning
Pepper to taste

Steam asparagus till half done. Season fish filets with savory table salt and pepper.

Roll fish filets with asparagus spears sticking out of the ends.
Place in buttered baking dish. In saucepan heat together butter, lemon rind, lemon juice onions and mustard. Pour over fish filets bake in a 400-degree oven for 10-15 minutes or until fish flakes. Basting fish twice.
