Pike Salad

How Kris does it...

This is how you can make a tasty pike salad that can either be served all by itself or as an appetizing side dish to any meal.

Serve on a platter of crisp lettuce and garnish with some pimentos and capers for a little added color and spice.

This is an easy and appetizing recipe that you can serve any time of the year.

The Recipe...

3 Cups cooked pike(In shallow glass pan bake 4 to 6 filets in oven 10-12 minutes until flakes sent aside and cool)
French dressing to moisten
1 cucumber (peeled and cubed)
2 tbsp small onion (chopped0
Mayo
Lettuce
Pimento & Capers (optional)
Salt & Pepper to taste

Flake fish moisten with French dressing and chill for 1/2. Then add pike, cucumber, onion, salt and pepper to taste. Mix in enough mayo to hold ingredients together. If to thick add a little cream to thin mayo. Serve on platter of crisp lettuce and garnish with pimentos and capers.
