Crappie Florentine

How Kris does it...

This is how I bake a delicious and healthy batch of crappie florentine that i just know you’re going to love.

Start by placing about 3 pounds of clean spinach into a 9 x 13 bakign dish. Cover it up and pop it into the microwave until it’s barely tender. Drain the spinach and chop it up, then put it back in your baking dish.Next i’ll melt some butter in a sauce pan, add in a little bit of flour and a cup and a half of milk. You’ll want to stir this constantly and cook it until the mixture has thickened.

Take about 3/4 a cup of shredded cheese and add it to the pan until it melts, then pour the mixture over the spinach.

Place a couple of pounds of crappie filets over the top of the spinach and cheese and add some salt and pepper to taste. Place it in the oven and cook this at 350 degrees until the fish flakes.

Minutes later you have a delicious dish that’s warm and ready to serve. It sure makes those ice fishing trips well worth the time and effort.

 

The Recipe...

3 lbs fresh spinach
1/4 cup butter
1 1/2 tbsp flour
1 1/2 cup milk
3/4 cup shredded cheese
2 lbs crappie filets
Salt & Pepper to taste

Rinse spinach place into 9x13 glass baking dish cover & cook in microwave until barely tender. Then drain and chop spinach, return to pan in saucepan melt butter; add flour, seasonings and milk. Cook until mixture has thickened stirring constantly. Add cheese to sauce pan melt then pour over spinach. Place filets on top of spinach and cheese and bake in a 350-degree oven until fish flakes.
